My puffy spinach pie
250g phyllo pastry
1 red onion, chopped
3 eggs, beaten
4T freshly chopped parsley
salt & freshly gound pepper
250g butter
1 good bunch fresh spinach / 750g frozen spinach
250g feta cheese, crumbled
1t dill
Saute onions in 4T butter until golden
Add in Spinach in batches and braise (if frozen, first thaw and drain)
Remove from heat and add eggs, feta, parsley, dill & seasoning
Mix well
Butter a 28cm baking dish & layer 8 pastry sheets on the bottom,brushing each leaf with melted butter
Spread evenly with spinach mixture & cover with remaining pastry sheets, again brushing each sheet with melted butter
Pour over any remaining butter
Cut into 16 squares & bake at 180 degrees until golden and puffy, about 25-30 min.
Serves 16
* I added nutmeg ad a few drops of cold pressed olive oil for extra flavour
